I know, everybody loves the '00 911 Turbo 3.6 [996] and '98 911 GT1 Race Version [996]. They are great in game and they have ultimate performance, but there are plenty of other cool cars in game.

I love the '50 356 1100 Coupe Ferdinand, '60 356B 1600 Super 90 Hardtop, '89 911 Carrera 4 [964], '93 911 Turbo 3.6 [964], '87 959, '73 911 Carrera RS 2.7 [901], '98 911 GT3 Road Version [996], '78 911 Turbo 3.3 [930], and '73 914/4 2.0.
I really miss the '88 969, '81 924 Carrera GT and GTS [937], '93 968 Turbo S, '94 911 Turbo 3.6 S [964], '89 911 Turbo 3.3 [930], '95 911 Carrera RS Clubsport [993], and '97 911 Turbo 3.6 S [993].

I'll have to say the 911 Carrera RS 2.7, because that car is the main reason NFS:Porsche is still my all time favorite game (altho Test Drive Unlimited came close). I spent a long time learning to drive it, but when I finally managed to control it, it was incredible. Ahh, the memories...

This is a hard one, but I have to choose the Porsche 935/78 "Moby D ick".
