If you want to skip NFSU's intro movies, replace the movie files in the Need For speed underground/movies directory with these 3 movie files:

Oh, why didn't I think of that..
The annoying thing is that you can't skip until the video clip with the guy in the TT starts. The animated sequence before that really disturbs me.. makes it feel like the game takes forever to start.

yep, I get tired of having to wait for the 3rd video to be able to skip the intros... I bet a lot of other people do too.
