It's some joke made up on another NFS: Carbon forum. People kept asking how to unlock the Corolla, nobody knew the answer, outside of using a trainer. Anyhow, someone who seemed to know a bit about the Initial D anime / manga series made up an answer, claiming there's a "Tofu Challenge" race when you win 15 canyon races in career mode.
Basically, it's a reference to one of the lead characters in Initial D, Fujiwara Takumi,who drives an AE86 (Trueno Sprinter Apex, or Corolla GTS in U.S. and other countries). He learns street racing techniques as far as downhill and uphill mountain road racing goes by delivering tofu to a nearby resort for his dad's tofu shop. (His dad was a legendary street racer in his time in the story.)
Takumi becomes a downhill specialist when it came to touge or mountain street races (which Carbon draws the inspiration for the canyon races from), etc.
If they really wanted to run with that little lie on that forum, they could have made up the stipulation that in the tofu challenge, you keep a cup of water in the car. If you spill any of the water while driving, it means your driving is too rough and will break the tofu being carried in the trunk, which means you lose the race. It's another Initial D reference.
Anyhow, long answer short, there is no Tofu Challenge. It's some sort of lie made up probably as a joke, but seems to have some believers, since many playing Carbon have no idea what Initial D is. I guess it just never quite caught on like the story about the secret Silverton garage with the Shelby did.
