well drag tires have low pressure to begin with. it's used because the faster the engine spins the the faster that centrifugal force pushes the air inside the tires outwards expanding the tires to it's maximum while providing amazing grip. still fascinating to see how much torque those cars have that they nearly flatten their tires from weight transfer!

The tyres you see in that video are called 'wrinkle-walled' tyres. They run at low pressure, and the rapid acceleration of the wheel causes the sidewall to collapse. This lets the tyres squash down on the road and create a larger contact patch.
The centrifugal force only kicks in at the other end of the drag strip, where the tyre will stretch outwards and provide the effect of a taller final-drive, as well as a smaller contact patch, and a higher trap speed can be achieved.
